- TRACY'S TRUFFLE PIE

- 1 Oreo cookie crust (or make your own chocolate crust - anything goes)

- 3/8 lbs butter (1-1/2 sticks)
- 12 oz. semi-sweet chocolate chips
- 1/2 pint whipping cream
- (Optional - a drop or two of any candy flavoring you fancy)

- 1 oz. ground almonds

- 1/2 pint whipping cream
- 2 T amaretto
- Sugar to taste, optional
- 1/2 t cocoa

- Melt the butter, chocolate and cream in a double boiler until completely
- smooth. Set aside. Sprinkle the almonds evenly over the bottom of the
- crust and spoon the chocolate mixture over the top. Refrigerate until
- firm. Whip the cream until very stiff, add the amaretto (and sugar, if
- desired) and pipe into rosettes on the pie. Dust with cocoa.

- This is more of a candy than a pie, and is best served with *good*
- coffee. I'm taking this to my father-in-law's house today for
- Thanksgiving! I don't know how many servings it makes, use your own
- judgement...and I've never found out how long it keeps because we
- can't keep it after it's been cut.

- Tip: the flavor is best when it stays in the 'fridge a day or two before
- serving.
